Vodka Penne & Garlic Bread

When I post recipes on this blog, I am going to try and stick to easy recipes that even beginner cooks can make with ease. I want to share with you food that I cook for my family and friends, that is simple enough for even the newest cooks to make without feeling overwhelmed.

Here is a delicious Vodka Penne with Homemade Garlic Bread that I slightly adapted from the Barefoot Contessa.  It is pretty simple yet full of great flavor, Enjoy!







Vodka Penne

Ingredients:

1/4 cup olive oil
1 small yellow onion (diced)
3 cloves garlic (minced)
1 tsp dried oregano
1 tbsp fresh oregano + a bit more for garnish
1 tsp crushed red pepper flakes
1/2 cup vodka
1 large can of whole tomatoes
salt and pepper
3/4 lb penne pasta
1 cup of heavy cream
1/2 cup of freshly grated Parmesan cheese

Directions:

1. Heat olive oil in a dutch oven or large ovenproof pot on medium & preheat oven to 375 degrees F
2. Cook onion and garlic in oil for 5 minutes or until translucent
3. Add the dried oregano and crushed red pepper flakes, stir well
4. Add the vodka, let cook for 1 minute
5. Add the whole tomatoes, crushing them in the pot with the back of your cooking spoon
6. Stir everything well
7. Season with salt and pepper
8. Cover and put in oven for 1 hour
9. Start boiling your pasta water when you take your sauce out of the oven (remember to add salt to your boiling water, before you drop your pasta!)
10. Ladle your sauce into a blender, and whiz up until you have a smooth consistency
11. Pour sauce into a pan, and add the 1 tbsp of fresh oregano and the heavy cream (you will be looking for a creamy consistency)
12. Season again with salt and pepper and let cook for another ten minutes.  At this point your penne should be cooking in the salted water.
13. When the pasta is cooked, drain in and toss with your vodka sauce (keeping it on the warm burner so it does not cool down)
14. Add the Parmesan cheese and stir. Pour into a large serving bowl and sprinkle with extra Parmesan and fresh oregano.

Garlic Bread

Ingredients:

1 loaf of ciabatta bread (cut in half lengthwise)
6 cloves garlic
1/4 cup fresh parsley
1/8 cup fresh oregano
1 tsp salt
1/2 tsp pepper
3 tbsp olive oil (approximately)
butter

Directions:

1. Preheat oven to 350 degrees F
1. Whiz up the garlic, parsley, oregano, salt and pepper in a food processor. If you do not have a food processor, you can mince the garlic and herbs by hand and mix all together
2. Heat up the oil in a small pot and cook the mixture for about 30 seconds, making sure not to let the garlic burn
3. Spoon the mixture on one half of the bread, and generously spread butter on the other half of bread
4. Put halves together and wrap the whole loaf in tin foil
5. Put in the oven for 5 minutes, take off foil, let bread sit for a minute or 2 then slice into pieces and serve

I hope you like this delicious and easy pasta dish that has become a regular meal in our home! Give it a try, you will love it!

Creme de la Chic

In the summertime I feel like I should usually be wearing a lot of color. I enjoy wearing color but honestly I could live in neutrals and probably be perfectly happy with it.  I wear black quite a bit as it goes with everything and I own so much of it,  however it can tend to look dreary in the summer months, especially if you wear too much of it.

If you do not feel like wearing something white but you want to stick to light clothing since it is summer, try mixing different shades of the same hue of a white or cream.  This trend looks super cute in many colors, but if you are going for a more subtle option, stick to whites, greys or even pastels.  I put together some different pieces to make a fabulous tone on tone outfit with a few variations.  Everything is very budget friendly! Except the watch, but it is a great purchase.  I wear mine all the time, and get a ton of compliments on it!

Cheers to The Weekend

Friday night my best girlfriend and I got together for a fun night out.  First, we went and saw this movie...

The story line sucked (as expected) because lets be honest, nobody is seeing this movie for the story.
I have always been a fan of Matthew Mcconaughey.  Not only is he gorgeous, but he is a very good actor.  Although his acting in this movie was not bad, I think I may be forever disturbed by his character in this movie.

Anyway, as luck would have it, the power went out in the theatre with about 30 minutes left of the movie so my friend and I headed back to her place, drank a glass of wine (ok a bottle) and left for a long night of dancing.

My husband and I enjoyed a late brunch Saturday afternoon at The Creek in Cathedral Bistro, before going to a wedding.  I had the Ratatouille and Smoked Cheddar Omelette with herbed potatoes and a side of fruit.


The wedding ceremony was held in a lovely church, the bride looked amazing and the officiant was hilarious.  After the ceremony a group of us went to Brown's Social House for some appy's and drinks to waste some time until the reception.
My hubby and I shared the spicy chicken tacos and a dynamite roll.

The wedding we attended was one of my husbands co-workers.  The groom is fairly new to my husband's work, so I had only met him and his bride a couple times previous. Their family and friends were wonderful and the wedding was truly one of the nicest I've been too.  The food was also delicious. 


Sunday morning my hubby, myself and our son went out for brunch with my side of the family. We then caught a film at the Imax and spent the rest of the afternoon in the sun.

Canada Day Long Weekend

This past weekend was full of shopping, food and tons of fun.  So, pretty much a perfect weekend in my books.  My husband, son and I headed to Edmonton, Alberta on Thursday mostly just to get away and have a good time.

We ate at some pretty sweet restaurants that I had previously seen on Food Network's "You Gotta Eat Here".  Have I mentioned I am obsessed with that show?  I also watch "Eat St." religiously.   When I saw episodes that featured Edmonton, I immediately noted them.

Below are some pics of our trip.  Warning: some may make you extremely hungry!

*These things were so damn good, I am still craving them and contemplating driving the 8 hours back to Edmonton just for these little bites of heavenly goodness.

This restaurant is authentic Mexican street food right in the heart of downtown Edmonton.  It has a very laid back vibe.  We enjoyed cervezas, great food, and a live DJ.

We ate at some other great restaurants as well such as: High Level Diner and Sugar Bowl.

We had a wonderful long weekend, but the highlight was definitely the World Waterpark in West Edmonton Mall.  We spent an entire day there, and were sad to leave. 

Usually we stay home for Canada Day and enjoy the festivities in our city, however I think we will make it a tradition to visit different Canadian cities from now on.  Next year, I'm thinking Toronto.  My husband would die to see a Maple Leaf game, and I really want to visit Canada's Wonderland.

A Few Things...

 Lemon Ice Cubes: Perfect for adding to glasses of water or ice tea

Sundance Pink Lemonade Wine: The perfect blush wine that is very suitable for summer and not nearly as sweet as most blush wines

Fixing up an old picture:  My grandmother painted this picture when she was younger (it is painted on velvet).  My husband recently painted the old, tarnished gold frame to a bright white to give it a way more modern look. It is now hanging in our bedroom rather than collecting dust in the basement.

An inspiring note: To keep around, so I can look at whenever I am feeling negative or stressed.

Happy Father's Day!


My weekend was relatively boring, as I spent most of it at work.  I did spend some time with my dad to give him his father's day gift and the usual giant bear hug.  I am very close with my dad and see him almost everyday!  My hubby was treated to a delicious dinner at one of his favourite restaurants.

Also delicious! The Creek in Cathedral Bistro is one of my city's best restaurants, and they never disappoint!

My husband does not eat dessert (except the odd bowl of ice cream) I know, what is wrong with him right? I on the other hand, have a dangerous sweet tooth, however I forgot to take a picture of dessert, until it was already half eaten!  Oops, guess I got excited.
